Configure a consumer to modify the current request using a builder.

Effectively this:

 exchange.mutate().request(builder-> builder.method(HttpMethod.PUT));

 // vs...

 ServerHttpRequest request = exchange.getRequest().mutate()
     .method(HttpMethod.PUT)
     .build();

 exchange.mutate().request(request);
